HOMEMADE PIZZA: How to Make Pizza Dough From Scratch Using Active Dry or Fast Acting Yeast

I've been craving Homemade Pizza for a while now, so thought I'd share How to Make Pizza Dough From Scratch with you, using either active dry yeast or fast acting yeast (also called rapid rise). The recipe is enough for one large 16" to 18" pizza, depending on how thick you like your crust. When it comes time to toppings, you can use whatever sauces and toppings you like. I decided to split my pizza in half and made one side with a red sauce, topping it with pepperoni, sausage, and Hatch green chile, and the other side I spread my homemade pesto on with a little heavy cream then topped it with roasted chicken and sliced red onion. Both sides were fantastic! Read on for the Pizza Dough Recipe.

Pizza Dough

1 cup warm water
2 1/4 tsp. (1 packet) active dry or fast acting yeast
1 tsp. honey
1 tsp. salt
3 Tbsp. olive oil
3 cups all purpose flour or bread flour (the bread flour makes for a chewier crust)

If using Active Dry Yeast, place it in a small bowl, add warm water (temperature should be between 100º and 110º), and honey and stir just to combine. Let stand 5-10 minutes until it becomes bubbly and active. If using Fast Acting/Rapid Rise Yeast, skip this step and just combine all above ingredients in a large bowl. The only difference is, the temperature of the water should be slightly warmer; between 120º to 130º.  

Once Active Dry yeast is bubbly and active, add salt and olive oil to it and stir to combine.  
In bowl of a stand mixer or separate large bowl, place 3 cups of flour, then add liquid yeast to the flour and knead.

Dough will be sticky. Remove from bowl and knead by hand on a clean flat surface that has been lightly dusted with flour. Once you can form a smooth dough ball, grease the same large bowl with olive oil, return the dough to it, cover with plastic wrap or a dish towel, and place in the warmest part of your home and let it rise. If you used Active Dry Yeast, let it rise approx. 1 hour until the dough has doubled in size. If you used Fast Acting Yeast, your dough should rise in about 10 minutes.

Once dough has doubled in size, flour surface, place dough on top of it and shape with hands, pressing down and stretching to desired shape and size. I like my crust to be a little thicker on the ends.

Place uncooked pizza crust onto baking sheet, spread a layer of sauce, followed by shredded mozzarella cheese. Add your favorite toppings and a little more mozzarella cheese. Then bake at 500º for 10 to 12 minutes or until the pizza crust and melted cheese is golden brown.
