Rye sourdough bread is very aromatic, healthy and keeps pretty well. The sourdough helps to digest the grain and makes it much better for us to eat.
Plus it does add tons of flavour.

Recipe for one bread:
Sourdough (make 8-12 hours in advance):
- 40 g of rye sourdough starter
- 150 g - 170 g of water
- 150 g rye bread flour (whole grain)

Bread dough:
- 300 g of the sourdough we made before
- 500 g of rye flour
- 360 g water (35 C° temperature)
- 12 g of salt

Bake at 250 C° for the first 25 minutes with the lid on. After that remove the lid and bake another 25 minutes at 220 C°. Perhaps you might have to drop the temperature to 200 C° depending on the crust.
