Yotsukaku Restaurant in Tachikawa, Tokyo, has been in business for 96 years and has long been a local favourite, with a long queue of customers. Many repeat customers come to the restaurant for the delicious food, which is made from homemade XO sauce, brand-name Kirishima SPF pork, handmade tofu from a tofu shop and other ingredients. The popularity of the restaurant is so great that at times there can be a queue of over 70 people waiting up to three hours for a table. The dumplings are wrapped on the same day without being left out, and 7,000 to 10,000 dumplings are made per day, with a high of 15,000 dumplings on a typical day. The owner's sincere approach to cooking was very impressive: no matter how busy he is, he takes the time and effort to prepare his dishes with love, and aims every day to make food that everyone will say tastes good.
