What’s not to love about sous vide roast beef, it's succulent, it's juicy, it's full of great flavor. Moreover, it can be used for anything from a fancy holiday dinner that you carve at the table all the way down to simple lunch meat for everyday sandwiches. There's a wide variety of uses and I’m going to dive into everything you need to know to make perfect sous vide roast beef.

Roast beef is one of my favorite meals to have. I can't get enough of it, whether it's sliced thinly for cold cuts or as part of a fancy holiday meal. And making sous vide roast beef is easier, and more flavorful, than the traditional method! I'll usually use a chuck roast for either steak-like at 131°F (55°C) or a traditional braise-like pot roast and cook it at 150°F (65°C) for 24 to 48 hours.
