Do you like mocha bread
Do you like mocha bread covered in sweet and crunchy coffee biscuits?
Today, I will make chewy mocha bread with a thick layer of coffee biscuits.

When I was young, I remember eating only the coffee biscuit part of the mocha bread.
The sweet and crunchy texture was so good that I just wanted to eat the biscuits :)
So today I made a lot of coffee biscuits.
Chewy mocha bread covered in crunchy coffee biscuits.
Unlike when I was young, chewy bread is now just as delicious as biscuits.

▶Ingredients
250g Bread flour
50g Eggs
90g Milk
60g Water
20g Sugar
20g Unsalted butter
5g Coffee powder
3g Salt
3g Dry yeast
200g Dried fruit
250g All-purpose flour
100g Sugar
50g Unsalted butter
50g Eggs
25g Milk
6g Coffee powder
3g Baking powder
1g Salt
▶How to make
1. Add all bread ingredients except butter and combine into a lump.
2. After 3 minutes, add butter and knead to create gluten for 12 minutes.
3. Proceed with the first fermentation until the dough swells 2-3 times the size of the original dough.
4. Add room temperature butter, sugar, salt, and eggs and mix well.
5. Add all types of powder and mix until no raw powder is visible.
6. Add milk, knead into a lump, and refrigerate.
7. Divide the dough that has completed the first fermentation into 4 pieces and spread each one out.
8. Put dried fruit on top of the spread dough and roll it into a round shape.
9. Spread the coffee biscuit dough widely and cover the dough in step 8.
10. Proceed with the secondary fermentation until the dough doubles in volume.
11. Bake in a preheated oven at 170℃ (338℉) for about 25 minutes.
