The name do Pyaza is a very interesting name!
It is said that the dish got its name because 2 types of onions are used or onion is added 2 times to the dish, 2 times the quantity of onions are used, which are all correct!
Paneer do Pyaza is a vegetarian version of the very popular dish mutton do pyaza.

Recipe :
Paneer Do Pyaza
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 4
Ingredients:
400g Paneer, cut into cubes
1 cup shallots, halved
1 cup onion paste
2 tbsp Oil
2 bay leaves
1 Mace Flower
1 tsp black pepper corns
4 green cardamoms
1 black cardamom
4 clove
1 cinnamon stick
2 whole red chilies
1 tsp turmeric powder
1 tsp red chili powder
2 tbsp ginger garlic paste
1 tsp garam masala powder
4 tbsp yoghurt, whisked
1 cup chopped tomatoes
1 tbsp Coriander seeds
Salt to taste
½ tsp sugar
1 tbsp lemon juice
Method:
Heat the oil in the pan. Fry the halved shallots or baby onions in medium hot oil till lightly coloured on the outside and tender inside.
Remove on a tissue paper.
Add the bay whole spices to the oil and allow to splutter.
Add the onion paste and saute over medium heat till the onion is golden brown.
Mix the turmeric powder and the red chili powder in a ¼ cup water and add to the pan. Mix well.
Add the ginger garlic paste and mix well. Add in the chopped tomatoes, salt to taste, mix well, cover and cook till the onions are tender.
Add in the yoghurt and mix well. Add half cup water , bring to a boil, cover and cook till the oil floats on the top.
Now add in the paneer pieces, water and mix well. Cover and cook for about 3-4 minutes.
Crush the coriander seeds. Add to the paneer gravy. Add the sugar, fried onions and mix well.
Add the Lemon juice. Sprinkle the Garam masala and mix well. Serve hot.
