Have you ever found a great deal/sale on blueberries, but passed it up because you didn't have a way to use that many? let me show you a great way to utilize blueberries so they don't go bad. This is one of the easiest canning recipes ever, and an amazing way to use and store blueberries. Nott only is it a pie filling, but can be used on french toast, pancakes, as a topper for a cheesecake, or even incorporated into a vanilla or chocolate cake. equipment needed:
water bath canner
4 quart jars with fresh lids and rings
1 funnel for filling jars
1 ladle
1 stock pot
Ingredients:
5 pounds of fresh or frozen blueberries, if fresh you will need to wash them then boil them for one minute, if frozen let thaw completely, and drain them.
3 cups 600 grams of granulated sugar
1-1/8 cup 135 grams of clear gel (cook type)
7 cups 1.66 liters of cold water
1/4 cup 63 milliliters of lemon juice bottled
Optional
20 drops of blue food coloring
7 drops of red.
