Hello, It's chopchop kitchen.
Today's video is the chili pesto chicken breast sandwich. Well,  actually a panini sandwich. I wanted to use the real red chili for the pesto. But the red chilis that I bought one is sooooo hot. So, I used the red capsicum in this recipe. If you want to eat a spicy pesto, you can use the real red chilis.
This pesto through pasta, add to roasted meats or serve with crackers and vegs sticks for enteraining. Moreover, you can keep this up to couple of months in your fridge.
If you make this, it will be a useful basic ingredient for your variety recipes.

Ingredients

Red capsicum 1ea, red chili or chili powder (optional), oilve oil, cashewnuts, greated parmesan cheese, toasted bread, mozzalella cheese, spinach, zuchinni(optional), eggplant(optional),  aioli or plain mayo


Method

1. Rub the olive oil on surface of red capsicum then roast it in the 200°C preheated oven or the air fryer for 15mins (Or Grease a pan with olive oil and cook red capsicum with cover the lid)
2. When the red capsicum is fully cooked, separate the skin and seeds from the running water.
3. Blend the cooked red capsicum, olive oil, cashew nuts, and parmesan cheese in a blender. (put some salt is MUST/chili powder is optional for colouring or spicy flavor)
4. Cut chicken breast thinly, season with salt and pepper, then cook in pan.
5. Depending on your taste, you can cook sliced zucchini or eggplant.
6. Cut the bread in half and put it in the order of Aioli, spinach, cooked chicken, and mozzarella, chili pesto.
7. Toast the bread back and forth in a pan or sandwich press and serve it.
