Tomato Pachadi is a popular South Indian side dish, often enjoyed with rice or as part of a traditional meal. Here's a simple recipe to make it:

Ingredients:

- *Tomatoes*: 4, chopped
- *Onion*: 1, finely chopped
- *Green chilies*: 2, slit ( optional)
- *Ginger*: 1-inch piece, finely chopped
- *Curry leaves*: 10-12 leaves
- *Mustard seeds*: 1 tsp
- *Cumin seeds*: 1 tsp
- *Turmeric powder*: 1/2 tsp
- *Red chili powder*: 1 tsp
- *Tamarind pulp*: 1 tsp
- *Salt*: to taste
- *Oil*: 2 tbsp
- *Coriander leaves*: for garnish

Instructions:

1. *Preparation*:
  - Soak tamarind in water and extract the pulp. Set it aside.
  - Chop the tomatoes, onions, green chilies, and ginger.

2. *Cooking*:
  - Heat oil in a pan on medium heat.
  - Add mustard seeds and let them splutter.
  - Add cumin seeds, curry leaves, and green chilies. Sauté for a minute.
  - Add chopped onions and ginger. Sauté until the onions turn translucent.
  - Add chopped tomatoes and cook until they turn soft and mushy.
  - Add turmeric powder, red chili powder, and salt. Mix well.
  - Add the tamarind pulp and cook for another 5-7 minutes until the raw smell of tamarind disappears and the mixture thickens.
  - If needed, add a little water to adjust the consistency.

3. *Garnishing and Serving*:
  - Garnish with finely chopped coriander leaves.
  - Serve the Tomato Pachadi with steamed rice or as a side dish in your meal.
