Peshawari Mutton Karahi:
Ingredients:
Mutton boiled 1/2 kg
Ginger garlic, paste 1tbsp
Green chilies 6-8
Tomato 4
Yogurt ½ cup
Turmeric powder 1/2 tsp
Red chili flakes 2 tsp
All spice powder 1 tsp
Oil ½ cup
Salt to taste
For garnishing:
Ginger julienne 1-inch piece
Chopped coriander leaves for garnishing
Method:
Heat oil in a pan, add ginger, garlic and mutton pieces, sauté until the water content from the mutton dries up completely on medium heat. Now add in the beaten yogurt, turmeric powder, red chili flakes, garam masala and salt. Mix well and cook for 2-3 minutes on low-medium heat. Add in the chopped green chilies, halved tomatoes, water and mix well. Cover and cook for about 20 minutes or until the oil separates and the gravy becomes semi-thick. Remove from heat. Garnish with chopped coriander leaves and julienne ginger. Serve warm.
Khatty Aalu Baingan:
Ingredients
Oil 1/2 cup
Cumin 1 tsp
Carom seeds 1/2 tsp
Fennel ½ tsp
Ginger garlic, finely chopped 1tsp
Green Chili 4
Onion, finely chopped 1
Turmeric ¼ tsp
Red chili powder 1 tsp
Coriander powder 1 tsp
Potato, cubed 4
Salt to taste
Tomato, finely chopped 3
Eggplant 1/2 kg
Coriander, finely chopped 2 tbsp
Method:
In a large woke heat oil add onion, cumin, funnel, carom seeds, and sauté until they turn slightly golden Then add potato, all spices along with ginger garlic paste baingan tomatoes salt and cook on a low flame. Until the potatoes roast is almost cooked. Finally, add coriander and serve.
