Ghagin Mimli Irkotta is Ricotta stuffed Pasta. The rich creamy ricotta filling, coupled with a simple garlicky tomato sauce is decadence, and is everything the Maltese love their pasta to be. Feel free to use any pasta that is suitable for filing, as this dish is certainly a crowd pleaser! YOU WILL NEED: FOR THE RICOTTA FILLING: 200 g of Ricotta Cheese 1 egg salt to taste generous amount of freshly ground pepper handful of grated cheese of choice optional - finely minced parsley FOR THE SAUCE: 1 small onion, diced 6 cloves garlic, grated 2 Tbsps. tomato paste 2 regular sized cans of diced tomatoes salt and pepper to taste finely chopped parsley a little water as needed 250 g Calamarata Pasta (or 1/2 of a large bag). Also feel free to use shell pasta, or any other medium sized pasta suitable for stuffing. 100 g grated mozzarella cheese, or to taste 1/4 cup grated parmesan cheese, or to taste + some for garnish chopped parsley for garnish
