RECIPES
*CHOCOLATE AND CHERRIES - OVERNIGHT OATS*
40g Oats
1 TBSP cocoa or cacao powder
50ml Plant Milk (I used Soy)
50ml Water
1/2 TBSP Maple Syrup
Frozen Cherries
METHOD
Add everything (except cherries) to a mixing bowl, combine well.
Take a drinking glass, or similar wide glass container, and make layers of cherries and oat mixture.
Cover, and leave in the fridge overnight.
*CURRIED LENTILS, TENDERSTEM BROCCOLI*
200g Tenderstem Broccoli
6-8 Spring Onions, chopped
250g pack of cooked Puy Lentils
3 Fire-Roasted Red Peppers, sliced (mine were in a jar)
2 Garlic Cloves, minced
1 Inch Fresh Ginger, finely chopped
2 TSP Medium Curry Powder
1 TSP Chilli Flakes
2 TSP Balsamic Vinegar
1 TSP Maple Syrup
1 large handful mixed salad leaves.
METHOD
Bring a large pan of water to the boil. Add the broccoli and cook for 5 mins, until al dente. Drain, and set to one side.
Heat a pan to medium-high.
Add the Onions, Garlic and Ginger to a large pan, add the curry powder and chilli flakes. Toast for 3-5 minutes, moving constantly. Add a tiny splash of water if you feel it may burn.
Add the lentils, balsamic and maple syrup - and a splash of water. Keep it moving, and cook for another 3-5 minutes.
Add the sliced red peppers, mix for 1 minute to warm the peppers slightly.
Add your salad leaves onto your plate, add the lentils on top and serve with a side of broccoli.
*CREAMY VEGAN COLESLAW*
1/4 of a small red cabbage
2 medium carrots
1 TBSP fresh Dill
1 small Apple
Salt, Pepper, to taste (optional)
Dressing:
2oog Cannellini Beans
1 Garlic Clove
1 TBSP Lemon Juice
1 TBSP Vinegar (I use Apple Cider)
1/2 TBSP Maple Syrup
100ml Water
1/4 TSP Dijon Mustard
METHOD
Add all ingredients to a high-speed blender, and whizz up. Decant to a glass container. This will keep in the fridge for up to 5 days.
Grate the carrot and cabbage, finely slice the apple and chop the
dill.
Add the salad to a large mixing bowl, and combine. Add salt and pepper if desired.
Add the dressing, as much as you'd like, and mix again.
Serve on top of the potato.
