Ingredients
300 gm Okra
3/4 cup peanut
3 tbsp oil
Pinch of asafoetida
1/2 tsp turmeric
1 tsp chilli powder
1 tsp coriander powder
Salt to taste
1/4 tsp sugar
1 medium tomato
Coriander for garnish
Method
To start, thoroughly clean the bhindi.
Trim off the heads and tips, then make a lengthwise slit down the middle of each bhindi, being careful not to cut them in half.
In a blender, grind the peanuts into a coarse powder.
Combine the ground peanuts with turmeric, chili powder, coriander powder, salt, and a pinch of sugar, mixing until well-blended.
Stuff this flavorful mixture into the slits of each bhindi
Place the stuffed bhindi in a steamer and steam for about 5 to 7 minutes, or until they are tender when pierced with a knife.
In a separate pan, heat some oil over medium heat.
Add a pinch of asafoetida and a bit of turmeric, followed by diced tomatoes.
Cook the tomatoes until they become soft and pulpy.
Gently add the steamed bhindis to the pan along with any remaining peanut mixture.
Mix carefully to avoid breaking the bhindis, ensuring they are well-coated with the tomato mixture.
Finish with a drizzle of ghee for a rich, buttery flavor.
Garnish with fresh coriander leaves and serve this delightful stuffed bhindi with hot chapattis.
