To Make Lahsuni Bhindi

Oil - 4 tbsp
Lady’s Finger - 400 gms
Salt - 1 1/2 tsp
Cumin Seeds - 1 tsp
Garlic - 6 cloves
Onion -2 nos
Green Chilli - 4 nos
Tomato - 3 nos
Turmeric Powder - 1/2 tsp
Hing - 1/4 tsp
Kashmiri Chilli Powder - 3 tsp
Coriander Powder - 3 tsp

Method:

1. Take oil in a pan. Add chopped bhindi pieces to it.
2. Add salt, mix and roast the ladies finger pieces for 2-3 minutes.
3. Once they are no more raw slightly roasted, transfer them to a bowl and keep them aside.
4. Take oil in a wide pan and add cumin seeds to it.
5. Roast the cumin seeds for about half a minute and add finely chopped garlic along with sliced garlic.
6. Add in sliced onions and roast until they are slightly brown in color.
7. Add in slit green chillies, chopped tomatoes and saute everything.
8. After a few seconds, add salt, turmeric powder, hing, Kashmiri red chilli powder, coriander powder and mix well.
9. Cook the masala for 3 mins and then add in the roasted bhindi.
10. Mix, cover with a lid and cook the bhindi for 5 mins.
11. Garnish the lahsuni bhindi with chopped coriander and serve the sabzi hot with roti, phulkas or any Indian bread by the side.

Lahsuni Bhindi is a nice stir fry recipe made with fresh and tender ladies fingers. As the name itself suggests, lahsuni bhindi has a good amount of garlic flavor in it. This is a dry curry which perfectly goes with plain rice-ghee/sambar rice/rasam rice. You can make this one in minutes and enjoy. This also makes a great lunch box recipe.
