Vegan deviled egg recipe! Oil-free, gluten-free, wslf friendly Easter recipe with Nisha Balsara from Lose Your Veganity here on YouTube! Full recipe below :)
Vegan Deviled Eggs Recipe
12 baby potatoes
1 can white beans, rinsed and drained
2 tbsp dijion mustard
1 tsp onion powder
1/2 tsp turmeric
1/2 tsp white pepper (or black pepper)
salt to taste
6 tbsp water
paprika
chopped chives
Clean whole, baby potatoes and add to a pot. Cover with filtered water and a few generous pinches of salt. Bring to a boil and cook until fork tender.
Drain water and allow potatoes to cool. Chill in refrigerator overnight or if you're short on time, place hot potatoes in a bowl of ice water to cool down.
Once cool, slice potatoes in half and scoop out the middle so it resembles an egg. A melon baller or small spoon work best for this :)
Next, combine beans, remaining potato pieces, mustard, onion powder, salt, pepper, and water in a blender and blend until very smooth.
Pipe or spoon mixture into the prepared potatoes and finish with a sprinkle of paprika and fresh chopped chives. A sprinkle of sea salt can also be added on top if you think it needs it.
Serve chilled or room temperature and enjoy :)
