Learn how to make a luscious lemon cream!  It's is ultra smooth, velvety and luscious!   It's similar to lemon curd as they both contain the same ingredients but lemon cream is much creamier, velvety and exquisite.  Lemon cream is sublime with scones, it perfect layered with crepes or cakes or filled in a tart shell to make a perfect tarte au citron!

105g    sugar
    6      egg yolks
    2      eggs
70g     unsalted butter, soft
