Making Pumpkin Gnocchi by Sam the Cooking Guy - but Vegan!

I try making Sam the Cooking Guy's Pumpkin Sage Gnocchi - but vegan-ized! If you've never had gnocchi (pronounced like "Nyo-kee"), they're like little pillows made of potatoes, they're soft and chewy, and you can use them like pasta in a lot of ways. These vegan gnocchi also cook quickly and go amazingly well with this super simple pumpkin sage sauce, made with just a handful of pantry ingredients. I was surprised how easy it was to make a vegan version of Sam the Cooking Guy's pumpkin gnocchi recipe - try it out!
