Veg Makhanwala  Recipe
For Makhni Gravy:

Oil                                             4 tbsp
Tomatoes                                  6 nos.
Onions sliced                             2 nos.
Water                                         as required
Green Chilli                               2-3 pcs
Black Cardamom                      1 pcs
Green Cardamom                     2 pcs
Cloves                                      5-6 pcs
Mace                                        1 pc
Kashmiri Red Chillies               2-3 pcs
Bay Leaves                               1-2 pcs
Cinnamon                                  1 inch
Garlic chopped                          1 tbsp
Garlic cloves                              7-8 pcs
Ginger                                        ½ inch
Ginger juliennes                         1 tbsp                        
Coriander stems                        5-6 pcs
Cashew                                      1 tbsp
Capsicum diced                         ½ cup
Cauliflower florets                      ½ cup
Carrot diced                               ½ cup
Green peas                                ⅓ cup
French beans                             ⅓ cup
Chopped coriander                     1 tbsp
White Butter                                2 tbsp
Sugar                                          1 tsp
Garam masala                            1 tsp
Fresh cream                               2 tbsp
Kasoori methi                             1 tbsp
Salt                                             1 tbsp


For Makhni Mixture:

Heat a pan, add oil, diced tomatoes, onion sliced and saute.
Then add red chillies, cashew, garlic, ginger, coriander stems, green chillies and cook for 1-2 mins.
Add bay leaf, cinnamon, mace, black cardamom, green cardamom, cloves and saute them.
Add some water, salt and cook for 10-15 mins. Cool it down, remove whole spices and make a paste of it.
 

For vegetables

Heat water, add salt and sugar.
Blanch carrots, cauliflower florets, french beans and green peas.
Transfer it to cold water.
Take a pan, add oil, ginger-garlic paste, deghi chilli powder and saute.
Then add khoya and cook it.
Add makhani gravy and cook for 5-6 mins. Add white butter, fresh cream and stir it.
Add some sugar and stir it.
Heat a pan, add oil, chopped garlic, ginger juliennes, chopped green chillies, capsicum dices and saute it.
Then add all the blanched vegetables and stir fry it.
Add makhani gravy to the vegetables, garam masala, kasoori methi and coriander chopped.
Finish it with fresh cream and white butter.
Serve hot with masala parathas.
