Ramen based on clear pork and chicken broth with pork chashu, narutomaki, tare, pickled eggs and fragrant onion oil. From homemade ramen noodles 👨‍🍳

✅ BROTH
For the broth (2 l):

- 2 kg pork bones
- 1 kg of chicken parts
- 1 leek
- 2 heads of garlic
- A piece of ginger
- 1 carrot
- 20 g kombu
- A handful of shiitake
- 3 liters of water

✅ Noodles
- 400 g wheat flour
- 160 g of water
- 4 g salt
- 4 g cansuya (do it yourself)

✅ TARE
- 150 ml light soy sauce
- 80 ml mirin
- 7g kombu
- 2 dehydrated shiitake
- A handful of Katsuobushi about 10 g
- Ginger
- A little chili for spice..

✅ PICKLED EGGS (Ajitsuke tamago ajitsuke tamago)
- 4 eggs (boiled)
- 200 ml soy sauce
- 100 ml mirin
- 100 ml sake
- 50 ml rice vinegar

✅ CHACYU
- 600 g pork belly… with or without skin… to your taste
- A piece of ginger 5 cm.
- 1 leek
- 3 garlic cloves
- 100 ml sake
- 50 g cane sugar
- 150 ml soy sauce
- 100 ml mirin
- Vegetable oil
- 250 ml of water
- Chili pepper (optional)

✅ FRAGRANT OIL
- 180 ml vegetable oil ... you can add sesame
- Large bulb
- Large clove of garlic
- A handful of katsuobushi

✅ NARUTOMAKI
- 450 g white fish fillet
- a tablespoon of mirin
- a tablespoon of sugar
- 2 tablespoons potato starch
- 1/2 teaspoon salt
- Protein
- Red dye

FOR SUPPLY
Green onions, Nori, Fried onions
