Hey guys, this week we are making something really neat! We are making a Tortilla Pie! Now if you know me you know that I love Mexican food and this dish was no exception. You guys will love this simple and tasty dish!
Tortilla Pie
1 lb of lean ground beef
½ cup of chopped onion
3 cloves of garlic minced
1 teaspoon of chili powder
½ teaspoon of ground cumin
1 can of rotel drained
¾ cup of ricotta cheese
1/2 cup of shredded mozzarella
3 tablespoons of minced cilantro
4 tortilla (8”)
3/4 cup of shredded Monterey jack /Colby jack cheese
Directions:
1)Preheat oven to 400 degrees
2)Combine hamburger meat, garlic and onion. Brown meat and drain the meat mixture.
3) Add in rotel, cumin, chili powder, and half of the cilantro to the meat mixture and combine over medium heat
4) In a small bowl combine the ricotta cheese and mozzarella cheese and go ahead and grease your 9 inch baking pan
5)Place one tortilla in the bottom then layer with half of the meat mixture
6)Add second tortilla and spread ricotta and mozzarella mixture over it like icing
7) Add third tortilla and add last half of the meat mixture
8) Cover with final tortilla and sprinkle Monterey Jack and Colby Jack and then add the last half of the cilantro
9) Bake covered for 15 minutes on 400 degrees
10) Enjoy!
