Recipes :

Nagauri Dal Tadka
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 3-4

Ingredients:
½ cup Masoor dal whole
¼ cup Arhar Dal
1 large Tomato
1 tsp Cumin
½ tsp Fennel seeds
5-6 Whole red chili
1 tsp Kasuri fenugreek  
1 tspDry mango powder
2 tbspCoriander leaves
¼ tsp Asafoetida
3tbsp Desi ghee
Salt to taste

Method:
Wash and soak the dals for 30 minutes. Pressure cook with 3 cup water, 1 tsp salt till well cooked. Heat the ghee. Add the asafoetida, cumin, fennel, red chilies and allow to splutter. Add the chopped tomatoes and cook till soft. Add tempering to the dal. Add the kasuri methi, coriander leaves, dry mango powder, mix well and serve.

Dal Amti
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 3-4

Ingredients:
1 tbsp ghee
1 tsp mustard seeds
½ tsp cumin seeds
pinch of hing
8-10 curry leaves
1 green chilli, finely chopped
¼ tsp turmeric
2 cup toor dal
1 tbsp goda masala
¼ tsp kashmiri red chilli powder
½ tbsp jaggery
1 tbsp tamarind pulp
2 tbsp coconut, grated
Salt to taste
2 tbsp coriander leaves, finely chopped

Method:
Wash and soak the dal for 30 minutes. Pressure cook with 3 cup water, 1 tsp salt and turmeric powder till well cooked. Heat the ghee. Add the asafoetida, cumin, curry leaves, allow to splutter. Add tempering to the dal. Add the red chili powder, jaggery, coconut, goda masala and cook for a few minutes. Add coriander leaves, mix well and serve.


Punjabi Dal Tadka
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 3-4

Ingredients:
1/2 cup arhar dal
1/4 cup red masoor dal
1/4 cup yellow moong dal
1 tsp cumin seeds
½ cup chopped onion
1 tbsp chopped ginger
1 tbsp chopped garlic
½ cup chopped tomatoes
1 tsp green chilies
2 tbsp coriander leaves
3 tbsp ghee

Method:
Wash and soak the dal for 30 minutes. Pressure cook with 3 cup water, 1 tsp salt and turmeric powder till well cooked. Heat the ghee. Add the cumin, allow to splutter. Add onions and sauté till translucent. Add chopped ginger, garlic, green chilies and sauté till golden. Add th red chili powder and then the chopped tomatoes. Cook till ghee comes on surface. Add tempering to the dal. Top with coriander leaves and serve.

Bengali Masur Dal
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 3-4

Ingredients:
1 tbsp mustard oil
¼ tsp nigella seeds
2 dried red chillies
2 green chillies
1 bay leaf
½ tsp turmeric powder
Salt to taste
1 cup red masoor dal
1 tbsp coriander leaves (finely chopped)

Method:
Wash and soak the dal for 30 minutes. Pressure cook with 3 cup water, 1 tsp salt and turmeric powder till well cooked. Heat the oil to smoke point. Cool a bit. Add the bay leaf, nigella seeds, red chiles and green chiles. Add tempering to the dal. Top with coriander leaves and serve.

UP Style Dal Tadka
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 3-4

Ingredients:
1 cup arhar dal
¼ tsp hing
1 tsp jeera
2-3 whole red chili
2 tbsp coriander leaves
2 tbsp ghee
½ tsp turmeric powder
Salt to taste

Method:
Wash and soak the dals for 30 minutes. Pressure cook with 3 cup water, 1 tsp salt till well cooked. Heat the ghee. Add the asafoetida, cumin, red chilies and allow to splutter. Add tempering to the dal. Add the coriander leaves, mix well and serve.
