Penang Curry is said to have originated in central Thailand with some influences from Indian and Khmer cuisines. If asked to describe the flavour, I would say that Penang Curry is like a combination of red curry and peanut satay sauce blended together. It is rich and creamy, not as spicy as red curry, and has underlying tones of peanut and coconut. This recipe is a traditional one and the flavours will transport you straight to the streets of Thailand. An absolute favourite !

Ingredients:
for the paste
1 tsp cumin; roast
1 tsp coriander seeds; roast
1/2 tsp black peppercorn; roast
2 tbsp peanuts; roast
10 dry red whole chili; soaked
1/4 tsp white pepper powder
3 Thai bird eye chilli
2 tbsp garlic
1/4 cup shallots
2 tsp coriander roots
2 tsp kaffir lime zest
2 kaffir lime leaves
2" galangal
2 stalks of lemon grass
for the curry
2 tsp oil
4 tbsp curry paste
1/2 cup baby corn; sliced
few Thai brinjals
1/4 cup red pepper; sliced
1/4 cup yellow pepper; sliced
1/2 packet mushrooms; sliced
3 tsp soy sauce/ fish sauce
salt to taste
2 cups coconut milk
1 small brinjal; sliced
2 tsp palm sugar
handful of basil leaves
kaffir lime leaves; thinly sliced to garnish
red chilli to garnish
coconut milk to garnish
