Noodles, and particularly soupy noodles, are true comfort food for me. My hubby doesn't particularly like noodles and refuses to eat soupy noodles so I only get to make these occasionally. But when I do get the chance, I make the most of it. This silky smooth Vegan Miso Ramen recipe is simple to make and takes just about 15 minutes to put together but is packed with umami flavor and loads of nutrition. I originally put this recipe together many years ago for my kid when he was leaving home for college, so he could get a home-cooked meal with as little effort as possible. Now, it comes to good use when I want a little pick-me-up. Try it!

Yields: 2 pax
Ingredients:
1 tbsp red miso/ 1 1/2 tbsp white or yellow miso paste
3/4 tbsp double Jiang paste
1 tbsp water
1/2 tbsp oil
1 1/2 tsp ginger
6 pods garlic; grated
3 stalks spring onion; chopped (white part)
1/2 tbsp sesame seeds
3 cups water
1 piece seaweed
2 (63 grams) noodle cakes
3/4 tbsp tamari/ soy
1/2 cup almond milk
handful of bakchoy
1/2 cup corn; boiled
1 stalk spring onion; chopped (green part)
1 tsp sesame seeds
chili oil as needed
