This Cajun Smoked Whole Turkey is juicy and tender with simple spices and a primal wood-fired flavor. Start with a simple brine and fresh herbs to make each bite burst with flavor! This turkey will be a hit for your Thanksgiving, holiday, event, or just because.


Ingredients
12-15 lb whole turkey
2 sticks celery, large chunks
1 carrots, large chunks
1 onion medium size, cut into quarter pieces
2 apples, cut into quarter pieces
½  red bell pepper, cut into quarter pieces
½ c parsley
1 tbsp granulated garlic
Rub seasoning (dealers’ choice)
1 stick unsalted butter, room temperature

Brine Ingredients: (Brine 1-2 days)
3 quarts of water (approx.)
1 to 1.5 quarts of ice (less if refrigerating)
4 of sprigs of thyme
4 sprigs of rosemary
2 tbsp ground black pepper
8-10 garlic cloves, smashed
1 c kosher salt
2-3 tbsp creole or cajun seasoning
3 c orange juice
3 bay leaves
¼ c sugar
½ c molasses

Creole Butter
1 c unsalted butter, melted
2 stick celery, large chop
½ red bell pepper
2 large shallots
1 small nob ginger
4 garlic cloves
2 tbsp light brown sugar (optional)
2 tbsp creole seasoning
2 tbsp black pepper
1-2 tbsp kosher salt
1 tbsp Maggies seasoning or soy sauce
2 tbsp worcestershire sauce
1 tsp sazon caliente
½ c parsley
1 c chicken stock
2 tbsp smoked paprika

Note: I smoked the at 185°F for the 2 hour, then turn the heat up to 22-250°F until done . For a long smoke 225-250°F its 30 minutes per pound. Cook the turkey to internal temperatures of 175° F to 180° F in the thigh and 170° F in the breast. Your turkey may take up to 12 hours to cook.
