Goi Ga - Vietnamese chicken salad

• 3 lbs whole chicken (Gallina Cafe or any type of type of chicken)
• 1/2 head of cabbage, chopped
• 2 cups chopped fresh Vietnamese coriander (also known as rau răm or cilantro)
• 1 large sweet onion, thinly sliced
• 2 medium carrots, julienned
• 1/2 cup chopped roasted peanuts
• 1 tablespoon chili garlic sauce (such as Cholimex Tuong Ot Viet Hot Chili)
• 2 tablespoons fish sauce
• 2 tablespoons lime juice
• 3 tablespoons sugar
• 1 teaspoon salt (to add to boiling water to cook the chicken)
• 4 pieces of kaffir lime leaves

Instructions:
1. Fill a large pot with enough water to cover the chicken, and add the salt and kaffir lime leaves. Bring the water to a boil, then add the chicken. Reduce heat to a simmer and cook for 20-25 minutes or until the chicken is cooked through. Remove the chicken from the pot and let cool slightly. Remove the skin and bones, then shred the chicken into bite-sized pieces. Set aside.
2. In a large bowl, combine the chopped cabbage, Vietnamese coriander, sliced onion, and marinated carrots.
3. In a separate bowl, whisk together the chili garlic sauce, fish sauce, lime juice, and sugar until the sugar is dissolved.
4. Add the shredded chicken to the bowl with the vegetables, then pour the dressing over the top. Toss everything together until well combined.
5. Garnish with chopped peanuts, and serve cold.

Dipping sauce that would complement the Goi Ga - Vietnamese chicken salad:
Ingredients:
• 2 tablespoons fish sauce
• 1 tablespoons lime juice
• 2 tablespoon sugar
• 1/4 cup water
• 6 garlic clove, minced
• 3 red chilies, minced
• ½ tbsp red sweet or non spicy pepper
Instructions:
1. In a small bowl, whisk together fish sauce, lime juice, sugar, water, and minced garlic until the sugar is completely dissolved.
2. If desired, add in sliced red chilies to the dipping sauce for some extra heat.
3. Taste and adjust seasoning as needed.
4. Serve the dipping sauce alongside the Goi Ga - Vietnamese chicken salad, and dip the chicken and vegetables into the sauce to add extra flavor.
