Ingredients:
• 1 Small Chicken
• 180 g Butter
• 1 Small Onion
• 10 Garlic Cloves
• ½ kg / 15 Small Potatoes
• 1 Lemon
• Fresh Rosemary
• Fresh Thyme
• 2 tbsp Dried Thyme
• 2 Dried Bay Leaves
• Salt and Pepper
• Black Pepper Grains
Step 1
Grease the chicken with melted butter and season with salt and pepper. In order to give this roast chicken a perfect flavor, sprinkle with thyme and make sure you cover all the parts. Flip the chicken on the other side and do the same.
Step 2
Fill in the chicken with 1 onion, 2 garlic cloves, a bunch of fresh rosemary and thyme. Put the lemon inside the chicken’s cavity and tie the legs together with a kitchen string. Place the chicken in the middle of the baking tray and start cutting the vegetables. I added around 15 small potatoes, approximately half a kilo.
Step 3
Peel off some garlic cloves and smash them in order to give a deeply flavor to all of our ingredients. Spread them over our potatoes and sprinkle some black pepper grains. Add 2 dried bay leaves. Place 2 butter cubes on top of our chicken and fix them with toothpicks. Add 4 butter cubes on top of our potatoes and a punch of fresh rosemary and thyme.
Step 4
Preheat the oven to 190°C/375°F and roast the chicken for 40 minutes. Remove it from the oven and grease the chicken on top with some melted butter. Bake it for 20 more minutes. Remove it again from the oven, grease again with some melted butter and squeeze half a lemon on top of the chicken. Place it back on the oven and bake it for 30 more minutes until golden brown on top.
