In this Japanese pickled ginger recipe, I want to show you how to make Gari (ガリ), or sushi ginger. I’m also going to show you the traditional method for turning the ginger pink using a part of the ginger plant. With thin sheets of crunchy ginger pickled in a refreshing sweet and sour brine, it’s the perfect side dish for sushi and can be used in everything from salads to stir-fries.
