Pineapple upside down cookies are
Pineapple upside down cookies are the perfect little treats. they look very festive and so delicious!
INGREDIENTS:
1 cup soften butter
1½ cups sugar
2 eggs
1 tsp vanilla extract
½ cup sour cream
3 cups all-purpose flour
1 tsp baking powder
1 tsp corn starch
½ tsp salt
12 canned pineapple slices
12 maraschino cherries
½ cup melted butter
1 cup light brown sugar packed
In a large bowl cream together soften butter and sugar.
Add eggs.
Add sour cream and mix.
Add vanilla extract.
Add in dry ingredients: flour,baking powder, corn starch and salt.
Mix to combine.
In a separate bowl add: melted butter and brown sugar.
Mix and set aside to set.
Using Muffin Top tin start assembling your cookies.
In the center of each opening put a tablespoon of brown sugar and butter mixture, then pineapple slices, then cherries in the middle.
Then scoop out the dough and flatten it with spatula.
Bake at 350°F(170°C) for 25-30 minutes.
Take out of the oven and let cool completely before unmolding.
Enjoy!
