Ingredients:

1 cup soaked white maash dal
3 green chillies
1 inch ginger
1 teaspoon hing (asafoetida)
1/4 cup water
1 cup wheat flour
1 cup refined flour (maida)
1/2 cup semolina (suji)
1/4 cup pure ghee (desi ghee)
1 teaspoon salt
2 bay leaves (tez patta)
1 teaspoon cumin seeds (zeera)
10 black peppercorns (kali mirch)
4 small cinnamon sticks (dalchini)
6 cloves (laung)
2 green cardamoms (choti elaichi)
1 black cardamom (badi elaichi)
1 teaspoon fennel powder (saunf powder)
2 tomatoes
4 green chillies
1 inch ginger
Fresh green coriander (hara dhania)
1/2 cup refined oil
1/2 teaspoon cumin seeds (zeera)
1/2 teaspoon hing (asafoetida)
3 whole red chillies (sabut lal mirch)
1/2 teaspoon turmeric powder (haldi)
1 teaspoon roasted cumin powder (bhuna zeera powder)
1 teaspoon Kashmiri red chilli powder
1 teaspoon coriander powder (dhania powder)
2 tablespoons water
Tamarind paste
1 teaspoon black salt (kala namak)
1 teaspoon salt
1/2 teaspoon sugar
2 cups water
1 tablespoon dried fenugreek leaves (kasuri methi)
7 boiled potatoes
Juice of 1 lemon

Step 1: Preparing the Dal Mixture
"Take 1 cup of soaked white maash dal, 3 green chillies, 1 inch of ginger, 1 teaspoon of asafoetida, and 1/4 cup of water. Blend everything well. The consistency should be thick, so if you feel it's too dry, you can add a little more water, but make sure the mixture isn't too wet."

Step 2: Making the Dough
"In a bowl, combine 1 cup of wheat flour, 1 cup of refined flour, 1/2 cup of semolina, 1/4 cup of pure ghee, and 1 teaspoon of salt. Add the blended dal mixture gradually and knead the dough. Continue adding the dal mixture little by little until the dough comes together."

Step 3: Resting the Dough
"Apply some oil to the dough, cover it, and let it rest."

Step 4: Preparing the Spice Powder
"Take 2 bay leaves, 1 teaspoon of cumin seeds, 10 black peppercorns, 4 small cinnamon sticks, 6 cloves, 2 green cardamoms, 1 black cardamom, and 1 teaspoon of fennel powder. Grind all these spices into a dry powder."

Step 5: Preparing the Tomato Mixture
"Now take 2 tomatoes, 4 green chillies, 1 inch of ginger, and some green coriander. Blend these ingredients finely."

Step 6: Cooking the Masala
"Heat 1/2 cup of refined oil in a pan. Once heated, add 1/2 teaspoon of cumin seeds, 1/2 teaspoon of asafoetida, and 3 whole red chillies, broken into pieces. Sauté these for 30 seconds. Then add 1/2 teaspoon of turmeric, 1 teaspoon of roasted cumin powder, 1 teaspoon of Kashmiri red chilli powder, and 1 teaspoon of coriander powder. Add 2 tablespoons of water and fry the spices for another 30 seconds."

Step 7: Adding Tamarind Paste
"Add tamarind paste to the masala and sauté until the oil separates from the masala."

Step 8: Adding Masala Powder and Potatoes
"Add the prepared spice powder, 1 teaspoon of black salt, 1 teaspoon of regular salt, and 1/2 teaspoon of sugar. Fry these for a minute, then add 2 cups of water and 1 tablespoon of dried fenugreek leaves. Crush and add 7 boiled potatoes to the mixture. Mix everything well."

Step 9: Finishing the Masala
"Squeeze the juice of 1 lemon into the mixture and mix well. Cover and cook for 4-5 minutes."

Step 10: Preparing the Kachoris
"Grease your working surface to roll the kachoris. Roll out the dough into a long roll and cut it into small balls. Grease your hands and shape each ball into a small disc."

Step 11: Frying the Kachoris
"Heat oil in a pan. Place the kachoris in the hot oil and fry them until they turn golden brown."
