1/4 cup coconut oil
1/4 cup unsalted butter
1 cup cane sugar
1 large egg
1/4 cup milk
1 teaspoon coconut extract
2 cups all-purpose flour
2 teaspoon baking powder
1/4 teaspoon salt
2 cups unsweetened shredded coconut

In a large bowl, mix coconut oil, butter, sugar, egg, coconut extract and milk; beat until smooth. Sift together flour, baking power and salt, add to liquid mixture and mix until dough forms. Stir in the coconut. Drop the batter onto a parchment lined baking sheet. Drop by small cookie scoop (1.5 Tablespoons ) Bake for 12 - 15 minutes until golden. Remove from the oven and transfer to cookie rack for cooling.,
To make smaller cookies drop dough using a teaspoon as your guide.
Bake for 8-10 for minutes until golden. Remove from the oven and transfer to cooling rack.
As soon as the cookies are cool, put them in an air-tight container. otherwise they will lose their crispness.
