Join me as I share my much-requested Loaded Potato Salad Recipe! There may be other potato salad recipes with sour cream out there, but trust me...this one is the best. This bacon ranch potato salad is sure to be a hit at your next picnic, bbq, or cookout.

Loaded Potato Salad Recipe
2 to 2.5lbs russet potatoes
1c sour cream
1/2c mayo
1/2 ounce (half a packet) of ranch seasoning
1.5c shredded cheddar cheese
1 - 3oz package real bacon bits (or cook and crumble your own)
2 to 3T green onions or chives
Wash and peel potatoes, and cut into large chunks. Place in pan and cover with cold water. Throw some salt in, too! Bring potatoes to a boil, and cook for 14 or 15 minutes. Potatoes should be very soft, and there should be no resistance when pierced with a butter knife. Drain and cool.
While potatoes cook, whisk together sour cream, mayo, and ranch seasoning. Cover and store in the refrigerator until potatoes have cooled.
In a large bowl, combine cooled potatoes, about 3/4 of your prepared dressing (remember to set some aside for later!), 1 cup of your cheese, 3/4 of the package of bacon bits, and your green onions. Stir gently to combine. Place in fridge for several hours or overnight.
Before serving, add the remaining dressing and stir gently to cover. Top with remaining cheese and bacon bits, and more green onions if desired.
