A Handvo is a spicy, slightly thick pancake available as street food in Ahmedabad, Gujarat. Preparation time: 15 minutes Resting time: 20 minutes Cooking time: 45 minutes Ingredients: 1 cup Aashirvaad Ragi flour ½ cup Besan ½ cup Rava ½ cup Curd 1 cup Water ½ cup grated Doodhi (bottle gourd) ½ cup grated Carrot ½ cup boiled Green peas 2 tsp grated ginger 2 tsp finely chopped green chilly ¼ tsp Turmeric powder 1 tsp Chilli powder 2 tsp Sugar Aashirvaad Salt to taste 1 tbsp oil 1 tsp mustard seed (rai / sarso) 2 tsp sesame seeds (Til) 2 dry red chilli broken into pieces A pinch of Asafetida (hing) Oil for greasing 2 Eno Sachets Procedure: 1. Add the Aashirvaad Ragi flour, besan, rava, curd and water and whisk. 2. Cover and keep aside for 20 minutes. 3. Add bottle gourd, carrot, green peas, ginger, green chilli, sugar, turmeric powder, chilli powder, Aashirvaad Salt and mix well. 4. Meanwhile, heat oil in a small tadka pan and add mustard seeds. 5. When the mustard seeds splutter, add sesame seeds, dry red chillies and asafetida (hing), pour into the prepared mixture and mix well. 6. Add more water and 2 Eno sachets and mix gently. 7. Grease a 4-inch diameter non-stick pan with oil. 8. Pour half the batter. 9. Cover and cook on a low flame till the bottom becomes golden brown. 10. Gently turn over and cook the other side on a low flame. 11. Repeat to make one more handvo. 12. Serve hot with green chutney.
