150 grams caster sugar
150 grams ground almonds
2 Free-range medium sized eggs
Zest of 1 lemon
100 grams plain (all purpose) flour
1 sheet of puff pastry
100 grams melted apricot jam

Cook at 180 oc for 20/25 minutes or until golden and the pastry is crisp underneath.
