Crock pot Birria egg rolls:-4
Crock pot Birria egg rolls:
-4 lbs roast beef
-3-4 cups water
-2 carrots
-1 yellow onion left whole
-8 dried chile guajillo
-5 dried chile ancho
-4 dried Chile puya
-1 dried Chile Pasilla
-4 garlic cloves
-1 tsp dried oregano
-1 tsp dried thyme
-1 clove
-1 whole cinnamon stick
-1 tbsp beef bouillon (might need to add more later)
-2 bay leaves
-2 tbsp oil
-Salt and pepper to taste
-Mexican melting cheese
-egg roll wrappers

If your meat is not frozen brown on all sides and cut into big chunks. Place it into your crockpot along with the onion garlic and carrots. Add in 2 cups of water and all of your seasonings and olive oil. Cook for about 4 hours on high before making your chili sauce.

To make Chile sauce de seed and take stems off of all of your Chile’s. Next all dried peppers to a pot of boiling water about 2 cups) and cook for about 20 mins. Transfer water and chili’s to a blender along with the bay leaves, onion, garlic and carrots from your crock pot. Blend until smooth and pour into your crock pot. Be sure to discard the Cinnamon stick and clove before serving. Cook your meat with the chili sauce for another 2 to 4 hours.

You can eat this as a stew\pot roast or you can make tacos from your meat with a side of consommé dipping sauce. To make the tacos add a little bit of oil to a pan coat your tortilla in the broth. Lay egg roll into a diamond shape and add a little bit of cheese, meat and onions. Roll up egg roll and fry it on both sides.When you serve your egg rolls make sure to serve with a side of consommé and add in some radish, raw onions, lime and cilantro.
