Today wer’re going to make cranberry shortbread cookies!
These cookies have a delightful blend of crunchy and chewy textures!
If you don’t have a biscuit mould that I used, you can just roll the dough into a log.

• Ingredients(Servings: 22 cookies🍪(1.5" square))
□ 100g Unsalted butter, at room temperature
□ 45g Powdered sugar
□ 1 Egg yolk, at room temperature
□ 1/8tsp Vanilla extract(Optional)
□ 120g Cake flour
□ 45g Almond powder
□ 1g Salt
□ 45g Dried Cranberries
• Before you start
Take your butter and eggs out of the fridge an hour before using
• Instructions
1. Cream together softened butter and powdered sugar
2. Add an egg yolk and vanilla extract until just incorporated
3. Sift together cake flour, almond powder, and salt into the butter mixture
4. Mix until the dry ingredients are just incorporated
5. Stir chopped dried cranberries and knead the dough a few times(Do not overwork)
6. Roll into a log, about 1.5-inches in diameter
7. Place dough on a sheet of parchment paper and tightly roll up the dough
8. Freeze for an hour. Meanwhile, preheat oven to 375°F
9. Remove from the freezer and unwrap
10. Slice the dough into 1/3″ thick and place on prepared baking sheets(These cookies don’t spread when baking)
11. Bake for 15 min at 355°F
12. Let cool on the pan for 5 min, and then transfer to a wire rack
13. Enjoy!
