UKADICHE MODAK /STEAMED MODAK IS AUTHENTIC MAHARASHTRIAN RECIPE .
MODAK IS OFFERED TO LORD GANESHA.IT IS ONE OF THE BEST SWEET RECIPE
LOVED BY EVERY MAHARASHTRIAN.


Ingredients-
For making modak covering-
rice flour-1 full glass or 300 gms
water same quantity or little less than rice
ghee as neeeded
salt if required.  its optional .some doesnt put salt in modak

For inner filling-
grated coconut -250gms
jaggery     -250 gms
ghee  -2tsp
cardamom and nutmeg powder -1.5 tsp
chironji  -1tsp

Method-
for filling-
Heat ghee in a pan, add grated coconut,stir for 2 mins,then
add jaggery,mix well,cook on low flame till jaggery melts and
the moisture of the jaggery dries up.once jaggery melts add
cardamomom nutmeg powderand chironji.Mix well,switch off the
flame once the moisture dries. keep aside to cool.
outer covering of modak-
take pan,add full glass of water ,add 1/4 tsp ghee in the water,
salt if required. bring water to the boil,once boiling add rice flour
mix well and cook for 2 to 3 mins.keep stirring.switch off the flame,
cover with lid for  2 to 3 mins.take cooked rice flour in a big
plate,knead into soft dough.knead immmediately when it is hot.
apply water on palms while kneading.

for modak-
takelime size round ball,roll the ball till smooth in palms,apply
some water on palms before rolling.Apply ghee on both side
of the ball,flattern the ball with the fingers to a round disc.
press the edges withe the help of the fingers and make petals,
place the feeling in the center,bring the edges together and join them.
remove the extra portion of dough from the top ,shape and taper
the top of the modak with the fingers.Make all modaks in same way.
apply ghee to all modaks before steaming to avoid sticking
each other.take water in the pan,keep it to boil,
grease steaming pan with ghee ,place all modak in it,once water boil
steam modaks for 20 to 25 mins.by covering with lid.after 20 mins
remove the modak. Ukadiche modak are ready to offer lord ganesha.
