Material

3 eggs
90 g of sugar
150 g of force powder
Baking Powder 8 g
Butter 120g
60g of honey
3 lemons


How to make

1. Melt the butter in the microwave and let it cool to a warm temperature (about 40 degrees.
2. Make lemon sugar by peeling the lemon peel with zester so that it is not too thick.
3. After putting the egg in a bowl, mix in the lemon sugar honey and add the flour and baking powder.
Add shredding and mix well so it doesn't clump together.
Add melted butter to 4.3 and mix well to prevent separation.
5. Cover dough balls with plastic wrap and rest in refrigerator for more than 8 hours.
6. Place melted butter and flour in a piping bag, set to prevent sticking, and put the discarded dough into a piping bag.
7. Put only about 80% of the dough in the prepared mold and bake it in the 180-degree oven for about 12 minutes.
8. Remove the well-madeleine from the mold and cool it down.

Honey Tip

1. When baking, only 80 percent of the shape looks pretty and only when it is 180 degrees or higher can the madeleine navel come out easily.
2. If you peel a lemon too thick, it might taste bitter, so it's better to peel it thin.
3. When mixing melted butter and dough, be aware that if the butter is mixed too cold or too long, the butter may harden and separate.
