Pakistani/Indian style mix vegetables & chicken Pulao. This recipe is quick & delicious.Good for kids as it is full of nutrition. You can serve it with raita or plain yougurt or with salad. For more tasty videos SUBSCRIBE to my channel youtube.com/c/LetscookwithFarah Follow me on Instagram click below 👇 www.instagram.com/letscookwithfarah INGREDIENTS: *Fresh Vegetables: 1.Carrots 2 2.Potato 1 big size 3.Radish 1 4.Green chilies 3 5.Onion 1(medium size) 6.Tomatoe 1 (medium size) 7.Bell pepper green & red (capsicum) half 8.Boneless chicken 2 breast pieces cut in small pieces. *Spices: 9.Red chili powder 1tsp 10.Black pepper powder 1tsp 11.Chinese salt 1tsp (optional) 12.Ginger garlic powder both 1 tsp 13.Red chili flakes 1tsp 14.Chicken stock 2 cubes 15.Cumin seeds 1tsp 16.Curry powder 1tbsp (you can use garam masala instead) 17.Bay leaf 1 to 2 18.Cinnamon stick 2 19.Cardamom 5 to 6 20.Cloves 4 to 5 21.Whole black pepper 5 to 6 22.Basmati rice soaked for 40 minutes. METHOD: 1.Add 3/4 cup cooking oil in pot on medium flame. 2.Add onion and fry them nicely then add cumin seeds fry and add water so that masala doesn't stick to pan. **For perfect pulao fry onion evenly until nicely brown.** 3.Now add chicken stock, curry powder & chili flakes. 4.Now add chicken and fry it nicely. keep stiring. **Take out cardamom if you don't like chewing them while eating rice** 5.Add potatoes and fry them add water, cover and let them cook for 5 minutes on low flame. 6.Now add carrots, radish & cook for 3 to 5 minutes on low flame. 7.Add bell pepper & green chilies and fry them for 2 minutes on medium flame. 8.Now add soaked rice and 2 cups of water. ***I added half cup of water along with rice and 2 cups after adding rice. I used 3 cups of basmati rice and 2.5 cups of water. Accurate method is if you are using 1 cup of rice then you should use 2 cups of water here i used 3 cups of rice that means i should use 4 cups of water but because i soaked rice for 40 minutes and they will cook quickly that's why i only used 2.5 cups of water*** 9.After adding water to rice let it boil once and then check salt and add salt as require at this stage and mix them (I used normal salt here not chinese) 10.Now cover the pot let the rice cook on medium flame for 10 to 12 minutes. ***Now cover the lid with aluminium, kitchen cloth or with newspaper whatever is available here i used newspaper because my pot is big in size. Now cover the pot and trn the heat to high for 5 to 6 minutes then turn down the heat to its lowest setting. Let rice simmer for about 15 minutes, then remove from heat and allow the rice to steam in the pot for another 5 minutes.*** Vegetable Chicken Pulao is ready to serve.
