Ingredients: (Serves 1-2)
8 chicken wings
1 leek
1 clove garlic (amount to taste)
kombu seaweed
800cc water
100cc sake
1 teaspoon salt (or half a tablespoon if you like it thicker)
Recipe
1. Put kombu and 800cc water in a pot.
Peel the garlic and set aside. Cut green onions diagonally.
Cut the chicken wing in half from the joint.
4. Put all ingredients in a pot, add sake and salt, and bring to a boil over high heat. 5.
After it comes to a boil, remove the lye, reduce the heat to low, cover with aluminum foil, and simmer for about one hour.
Finish with black pepper and a drizzle of sesame oil or soy sauce to taste.
