Recipe:

Ingredients:

1 kg pork belly, skin on
2 teaspoons salt (for marinating the base)
2 teaspoons bean sauce
Sprinkle of pepper
1 teaspoon Chinese five-spice powder
2 teaspoons salt (for massaging the skin)
2 teaspoons bicarbonate soda
Instructions:

Prepare the Pork Belly:

Rinse the pork belly under cold water and pat it dry with paper towels.
Using a sharp knife, score the skin of the pork belly in a diamond pattern, being careful not to cut too deep into the meat.
Marinate the Pork Belly Base:

In a bowl, combine 2 teaspoons of salt, bean sauce, pepper, and Chinese five-spice powder.
Rub the mixture evenly over the flesh side of the pork belly, ensuring it is well coated. Let it marinate for at least 1 hour in the refrigerator.
Massage the Pork Belly Skin:

Preheat your oven to 220°C (425°F).
In a separate bowl, mix 2 teaspoons of salt and bicarbonate soda.
Massage this mixture thoroughly into the skin of the pork belly. This will help to dry out the skin and achieve crispiness during roasting.
Roast the Pork Belly:

Place the marinated pork belly on a wire rack set over a baking tray, skin side up.
Roast the pork belly in the preheated oven for about 30 minutes or until the skin starts to blister and bubble.
Crisp up the Skin:

Increase the oven temperature to 250°C (480°F) and continue roasting for another 20-30 minutes, or until the skin is crispy and golden brown. Keep an eye on it to prevent burning.
Rest and Serve:

Once the pork belly is cooked and the skin is crispy, remove it from the oven and let it rest for about 10 minutes before slicing.
Slice the Siu Yuk into pieces and serve hot with steamed rice, vegetables, or your favorite side dishes.
