(Update: this method doesn’t work for the Van Horn stable, you’re good to go in the others.)
1. Steal a wagon. Personal wagons with single and armed passengers are the best because no bounties will be incurred.
2. Ride to the stable, pull out your gun before entering.
3. Shoot once, anywhere. When the stable owner runs away, get off the wagon and feed your chosen horse. Feeding once will do.
4. After feeding, escape the wanted zone without alerting the police and whistle, the horse will come galloping to you. Wait for the police to go away.
5. Take your stolen horse back to the stable and saddle it there.
6. Enjoy your horse.
