INGREDIENTS & NOTES

#1 Chickpea Scramble
1 tbsp olive oil
1 can chickpeas (400g = 14oz)
generous pinch of salt
spices to taste (curry powder, chili, pepper, cumin, paprika)
1 tsp white wine vinegar
1 tsp agave syrup
1 splash oat milk
1 handful cherry tomatoes
1 handful basil
vg butter for the toasts, or hummus, vg cream cheese etc
2 english muffins


#2 Basic Stovetop Oat Granola
vg butter for the pan
3-4 tbsp applesauce
½ cup (50g) rolled oats
pinch of salt
dash of cinnamon
½ tsp sesame seeds
optional: 1-2 tsp sugar or agave

serve with yogurt of choice, fruit etc
→ serves 1


#3 Gochujang Chopped Salad
1 baby romaine lettuce
⅓ medium cucumber
1 handful cherry tomatoes
~ ½ can lentils
1-2 tbsp almond flakes

2-3 tbsp unsweetened soy yogurt
1-2 tsp olive oil
1 tsp white wine vinegar
½ tsp gochujang (or to taste)
1 tsp soy sauce
1 tsp vg mayo
→ serves 1


#4 Creamy Lemon Pasta
100-130g pasta of choice (3.5oz - 4.6oz)
generous pinch of salt for pasta water
1 tbsp olive oil
2 cloves garlic
200ml soy cream, unsweetened (¾ cup + 2 tbsp)
½ tsp lemon zest, or more to taste
juice of ½ lemon, or more to taste
salt, pepper to taste
1-2 ladles pasta water, or to preference
2-2 handfuls baby spinach
sesame seeds for serving or vg parmesan cheese!
→ 1 larger serving, or 2 smaller ones


#5 Chocolate Loaf Cake
250g flour (2 cups plus 1 tbsp)
40g vanilla custard powder (4 tbsp)
45g unsweetened cocoa (1/2 cup minus 2 tsp)
180g sugar (1 cup minus 1 1/2 tbsp)
2 1/2 tsp backpulver
1 pack vanilla sugar or 1 1/2 tsp vanilla extract
1/2 tsp salt
90g oil or melted vg butter (1/3 cup) (i used a mix of sunflower and olive oil)
220ml non dairy milk (1 cup minus 2 tbsp)
3 tbsp apple sauce
1 tbsp white wine vinegar
50g choc chips (1/3 cup)
*25cm loaf pan
*bake for 45-52 min or until baked through at 180C


#6 Teriyaki Style Sauce
2 tbsp soy sauce
1 tbsp balsamic vinegar
2 tsp agave syrup
1 splash white wine
1 tsp vegan worcestershire sauce
1 tsp cornstarch dissolved in ¼ cup water (60ml)

→ mix all the ingredients cold, then bring to a quick boil, mixing all throughout, once the mix starts thickening up, turn heat to medium low, let simmer until desired consistency is achieved, feel free to add more water, taste test, adjust to your liking
→ serve over tofu, rice steamed veg etc

#7 Simple Rice Pudding
1 cup cooked short grain rice (150g)
⅓ cup water (80ml)
½ cup non dairy milk (80ml)
pinch of salt
sugar or agave to taste (2 tsp?)
vanilla to taste
serve w berries and iced matchaaaa (if u want)
