For 1 kg of red fish:
• Salt - 2 tbsp.
• Sugar - 1 tbsp. (optional)

2. Mix salt and sugar. You can salt without sugar, but with sugar a more balanced taste. Salt should be in a glass container in the refrigerator.
3. Depending on the size and weight of red fish, salting can be from 12 hours to 36 hours. Under the influence of sugar and salt, a lot of liquid will come out of the fish, it must be drained and stored in a clean glass container.
