Inside a Double Decker

The Double Decker is made of two main parts, the bottom layer is composed of cereal while the top is a lightly whipped nougat, with both layers covered in chocolate. X-Ray Computed Tomography has been used to analyse the dual layer structure of the Double Decker bar at a pixel size of 3μm. The orthoslices at the start of the video show how the two layers are sandwiched together and surrounded in chocolate. The orthoslices also show the high degree of porosity within both the chocolate and nougat, while the cereal is composed of a foamlike structure. A skeletonisation of the cereal structure shows the complex interconnected structure and how this interacts with the porosity within the chocolate of the lower part.
