This recipe is as AUTHENTIC as it gets. This is how my late grandma used to make it and my mum too! It's probably the most preferred rice dish when we all get together on special occasions.

How to make CLARIFIED BUTTER at home: How To Clarify Butter | Homemade Desi...
(Serves 4/6)
Ingredients:
1kg mutton on the bone ( I used leg)
750g basmati rice
700g red potatoes
300g onion finely sliced
200g fresh tomatoes chopped
3/4 cup oil
4/5 dried Kashmiri chillies
35g fresh garlic cloves
35g fresh ginger
35g or 4 bullet chillies
Ingredients for the broth:
1.5 litres water
1 onion and 1 tomato
Spices as follows:
1.5 tablespoon salt
1 tablespoon of coriander seeds, cumin seeds and fennel seeds
1/2 teaspoon black peppercorns
) 1/2 teaspoon cloves
2 black cardamom pods
3 green cardamom pods
2 bay leaves
2 cinnamon sticks
Spices for the rice:
1 tablespoon coriander powder
1 tablespoon cumin seeds
1/2 teaspoon black peppercorns
1/2 teaspoon cloves
2 black cardamom pods
3 bay leaves
2 cinnamon sticks
