Ukrainian Vodka/Horilka (горілка)Reminder: This recipe can be scaled up to make as much as you need. I did a small batch for this demo.
Recipe for 3 gallons (12L) of wash- 8%abv
4 gallons (16L) water

1. Grind your grain, then slowly mix in your grain to 4 gallons of cold water, making sure to stir out dough balls. Add the rice hulls last to aid with draining. Heat up the water to 113F(45C) for a beta glucan rest to cut the goopiness of the rye. Hold at this temp for 30 minutes.
2. Raise the temp to 132F (55C) and do another rest, holding the mash at this temperature for an additional 30 minutes. This will also help reduce the goopiness of the rye and wheat.
3. Now raise the temp of the mash to 150F (65C) and hold for 60-90 minutes to allow the malt enzymes to convert all the starch into sugars.
4. Strain off the grain and sparge with a few quarts (Liters) of hot water to rinse out the residual sugars if desired.
5. Cool the wort to 80F(26C) then pitch your yeast and let the wash ferment for 7 days, or until the hydrometer reading is 1.000 or lower.
6. Hypothetically, this can be distilled 2 times in a pot still to make Horilka. At which point you can enjoy it cool, not too cold with some smoked meats, fish and pickled vegetables.
7. You could also make a very tasty and popular variety of Horilka buy adding a few fresh red chilies and a touch of honey to the spirit. Recipe for that variation on my Patreon page.
