Ingredients

Beef -500gm
Ginger -1tsp
Garlic-2tsp
Green chilli -1
Chilli Powder -1/2 to 3/4tsp
Pepper Powder -1/2tsp
Garam Masala -1/2tsp
Turmeric Powder -1/4tsp
Salt-
Water -4tbsp

For Masala
Onion -2
Ginger -1tsp
Garlic -1tbsp
Green Chilli -2
Curryleaves -
Salt-
Pepper Powder -1/2tsp
Garam Masala -1/2tsp
Turmeric Powder -1/4tsp
Chilli Powder -1/4 to 1/2tsp
Potato -2

Method

Wash and drain 500 gm of beef pieces. ¼ tsp turmeric ,3/4 tsp chilly powder,1/2 tsp garam masala, ½ tsp pepper and salt – Marinate the beef with this powder mix. Shift it to the cooker and add ginger (small pieces), green chilly and finely chopped garlic. Add very little water. Mix it well . and cook for 4 whistles. Check if it is cooked or not. If not cooked then put it for more whistles. If there is any water we need to reduce it on medium flame.
Take a kadai add some oil. On medium flame add ginger, garlic . saute well. Add salt. Add onion ,green chilly and curry leaves. saute this till the onions turn light brown. Add powders – turmeric, chilly powder,garam masala and pepper. Saute for 2-3 mins. In a separate pan boil 2 medium sized potatoes. Mash the potatoes, add a bit of salt and keep aside.
Mince the cooked beef pieces after keeping aside few cooked beef pieces. That few beef pieces have to be thinly sliced and not minced. Add the minced beef and thinly sliced beef to the onion masala and saute on low flame. Saute for 5 mins. Then add the potato mashed. Beef should be more than the potato. So add accordingly. Mix well. Check the spices. Add pepper powder if required. Do not add any other powder to adjust.
Now make small balls of the sautéed beef masala. The consistency is correct when we are able to make the balls perfectly. Shape it on your palm and keep it on a plate. Grease your hands before you shape it. Beat two egg whites and keep it aside in a bowl.  Add oil to a kadai for frying. Dip the shaped cutlets in the egg whites, roll it well and fry it in the oil. Shallow Fry it on  medium heat. You can also dip the cutlets in whole egg and shallow fry it. Coat the cutlet in the whole egg and fry it.there will a coating of the yolk on the cutlet when you are frying it. Remove from fire when it is cooked well on both sides.Serve it hot.
