Banana Leaf Rice Curry
Ingredients for Rice:
Fragrant jasmine rice (soaked) 2 cups
Thick coconut milk 200 ml
Kaffir lime leaves few
Lemon grass 1 stalk
Cinnamon stick 1
Star anise 2
Method:
Cook rice with coconut milk, kaffir lime leaves, salt, cinnamon stick, star anise and some water. Keep warm.
Ingredients for the Curry:
Soya granules 1 cup
Potato (cubed) 1
Carrot (cubed) 1
Ingredients for Grind to a paste:
Red chilies 4
Onions 2
Garlic 4 cloves
Salt 1 tsp
Fresh turmeric 1”
Cashews 4
Ginger 1”
Lemongrass (chopped) 1
Coriander seeds 1 tsp
Cumin seeds 1 tsp
Curry powder 2 tbsp
Method:
Boil the soya granules in water, drain and sauté with 1 tbsp oil till dry and a bit crispy, keep aside. Heat 4 tbsp oil in a pan, add the paste, sauté till fragrant. Add the soya granules, potato and carrot. Sauté and add about 2 cups of water and cook covered till water almost dries up. Now add about 1/4 cup of coconut milk. Cook once more till dry, but still a bit moist.
For Assembling:
Banana leaves as required
Method:
Take a small bowl of cooked rice and flatten it on a piece of banana leaf.
Put few tablespoons of soya curry onto the rice. Gather the rice with a spoon to cover the curry. Slowly roll to form a tight cylinder. Secure ends with toothpicks. Roast on a wire rack which is placed on the gas stove. Serve hot with sambal, crackers and achar.
Sambal ( Chillie Paste)
Ingredients:
Red chilies 4
Garlic 2 pods
Onions 2
Oil 1 tbsp
Method:
Boil together 4 red chilies, 2 garlic pods and 2 onions. Blitz in a food processor. The texture should be coarse not smooth. Heat 1 tbsp of oil and sauté chilie paste. Add a pinch of sugar and salt.
Achar
Ingredients:
Cucumber (diced) 1
Carrot (peeled and diced) 1
Onions (halved) 2
Red bird eye chilies few
Method:
Soak all these in 2 cups water, 2 tbsp vinegar, 3 tsp sugar and 1 tsp salt.
Spicy Wings
Ingredients:
Chicken wings ½ kg
Veri Peri sauce ½ cup
Oil as required
Method:
Marinate wings in the sauce for few hours. Bake or cook on stove till done.
Lemon Buttermilk Cake
Ingredients:
Flour 1 1/4 cups
Caster sugar 3/4 cup
Baking powder 2 teaspoons
Salt a pinch
Grated lemon zest 1 tablespoons
Egg 1
Buttermilk 1/2 cup
Sour cream 1/3 cup
Lemon juice 1/4 cup
Oil 3 tablespoons
Vanilla or lemon essence few drops
Method:
Sift together the flour, baking powder and salt into a bowl. Stir in the sugar. Beat the egg, buttermilk, sour cream, lemon juice, lemon zest, oil and vanilla or lemon essence till well mixed. Add this mixture to the flour mixture and mix lightly and gently with a spoon until just combined - do not overmix . Spoon the batter into a greased and lined pan, make a slight depression in the center with the back of a spoon. Bake at 180 degrees C for about 25-30 minutes. Remove pan onto a wire rack. Glaze the lukewarm cake with the lemon glaze
Dust the cooled cake with sifted icing sugar.
For The Lemon Glaze:
Icing sugar 1/2 cup
Lemon juice 1/4 cup
Lemon zest 1 tbsp
Method:
Combine the lemon juice and icing sugar in a saucepan over very low heat. Stir the syrup until it is well blended. Add the lemon zest. Immediately brush the syrup all over the lukewarm cake. Let it soak in, then continue brushing and dabbing it on until all of the syrup is used. Serve the cake in squares. Sift icing sugar over cooled cake.
