Ingredients:
- Cheese of Choice (Cheddar and Red Leicester) - 400g
- Sodium Citrate - 11.7g
- Water - 424mls


1) Add the sodium citrate to boiling water and mix to dissolve.
2) Slowly add grated cheese small amounts at a time and whisk continuously.
3) Once all cheese is add and emulsified into the sauce the sauce is ready, cooling will thicken the sauce.
