Holiday Leftovers | Ham, Mac and Cheese Casserole

What to do with Holiday Leftovers? I took my leftover ham and mac and cheese and made a casserole.  Add some green veggies, some more cheese and you have a delicious and quick meal.  I boiled brussel sprouts because I was out of frozen peas.  It was very tasty and super easy!

Here are some Leftover Options:
Ham, Mac & Cheese - cut up your ham.  Spray with oil the sides of a baking dish.  Add your leftover mac & cheese. Sprinkle the cut up ham on top.  Sprinkle some powdered onion, powdered mustard, black pepper.  Cut up some butter and place around top of casserole.  Add cooked brussel sprouts or you can use green beans or frozen green peas. Add more grated cheese (I used smoked gouda).  Cook in over at 350 degrees fahrenheit for 15 minutes.  Turn on broiler for the last 2 minutes to brown the top of the casserole.  It is so YUMMY!

Split Pea Soup - take your leftover ham bone with meat on it and rinse it well to get off any honey glaze and place in a soup pot.  Fill with 8 cups of water.  Bring to boil and then reduce heat to medium low and let simmer for 1 hour.  After the hour, take the bone and meat out.  Shred the meat off the bone making sure to remove gristle, fat and bone.  Rinse two pounds of split peas.  Add to the broth.  Cut into cubes, 4 large carrots.  Chop a whole white onion. Chop 2 sticks of celery. Place all veggies in the broth with the peas.  Add ground black pepper. I did 1 tablespoon.  You don't need salt because the ham is salty. Bring to a boil.  Reduce heat to medium low and let simmer for an hour or until the peas have cooked down and the soup become thick.  Soups are always the best the second day and will thicken even more. You can freeze this soup for later also.

Prime Rib Stew - cut off of bone and remove fat, from your leftover prime rib meat and set aside. Take your  gravy/drippings/au jus and place in large pot.  Pour in 4 cups of water and 1 cup of red wine.  Peel and cut into chunks the carrots, celery, onions and potatoes (amount based on how much leftover meat you have) and add to the pot. Bring the veggies and liquid to a boil.  Reduce heat to medium low.  Add in the cut meat.  Let cook until veggies are tender.
